Sloppy Joes are very easy to make. If you have bread, crumbles, ketchup or anything tomato-y and sauc-y, you pretty much have dinner on hand. For this recipe, I used pasta sauce, some sandwich bread laying around, and vegan Beyond Beef Crumbles.
You can use any other meat alternative you want. Or even some cut up mushrooms as well. I kind of just did my own thing for this recipe, and didn’t measure anything out but you get the gist of it…
- Chop up about half a green bell pepper and 1/4 of an onion. Cook over low-medium heat until soft.
- Add the Beyond Beef Crumbles and cook over medium heat. Add garlic powder, salt, pepper, and ketchup/tomato sauce/pasta sauce. (I also threw in half a pack of sazon but that’s because as a Puerto Rican, I believe everything should have sazon in it).
- Bring the heat down to a simmer and let it cook all together for about ten minutes.
- Throw your finished product on some bread, and there you go, you now have sloppy joe.
